Matcha Macaroons for Passover
Coconut macaroons have always been one of my favorite desserts ever since childhood! My mother typically made these as a passover dessert and dipped them in dark chocolate, which I absolutely loved.
I thought it was about time I made them and gave them a fun new spin!
Part of the reason these little treats are so amazing is because they are SO SIMPLE and honestly don’t require much baking skill. So if you’re not the world’s best baker, I promise you can still make these with ease! Inherently they are also pretty healthy due to the handful of ingredients required to make them. I decided to make a version that’s gluten-free and refined sugar free, using unrefined coconut sugar and unsweetened coconut flakes.
I also wanted to find a way to make these unique and exciting… so I infused matcha into this recipe by dipping and drizzling the macaroons with matcha white chocolate for a delicious and fun flavor combo. Not only are they tasty, but they also look super pretty!
5 simple ingredients for the macaroons include; unsweetened coconut flakes, almond extract, egg whites, coconut sugar, almond flour.
Plus, matcha and white chocolate for the matcha drizzle. That’s it!
