Chocolate Matzo Bark
Around Passover, I’m always looking for fun and creative ways to use Matzoh in my snacks and meals. Likely if you bought some this season, you’re going to have some leftovers beyond the holiday. So, ‘what can we make with it?’ is the question.
That’s where this Chocolate Matzoh Bark comes in. It’s basically like a giant chocolate covered pretzel…crunchy, salty, and sweet. Plus, it’s simple to make and probably is a good change from how you have been eating your matzo! I layered it with a simple date caramel, dark chocolate and then sprinkled with chopped nuts and sea salt for that salty and sweet factor that gives chocolate covered pretzel vibes- according to my boyfriend… he said it, not me! And when he says something is good, it means it’s really good because he is truly my most honest critic!
Whether you celebrate passover or not, this dessert deserves your attention. If you don’t already have some matzo, it will definitely be on sale after the holiday- so you can still grab some! I used gluten-free matzo, which is actually better than regular mtazo in my opinion, but you can use whatever you’d like. It’s also really fun to get creative with this because you can add on whatever toppings you’d like (just like chocolate covered pretzels), think sprinkles, dried fruit, coconut flakes, a drizzle of peanut butter, or whatever else makes a perfect combo for you!

1 piece of matzoh
3 soaked pitted medjool dates
1 tbsp tahini
1 tsp coconut oil
1/4 cup melted dark chocolate
1 tbsp chopped nuts
Sprinkle of sea salt
