Tuscan White Bean Soup
Tuscan White Bean Soup
This quick and easy soup makes the perfect hearty, yet light winter lunch! It requires minimal ingredients, takes under 30 minutes to whip up, and you’ll have meals ready all week long!
Ingredients
1 leek trimmed and chopped
1 tbsp EVOO
1/2 cup quinoa
1 can Cannellini beans drained & rinsed
4 cups veggie broth
1 1/2 tsp A Spice Affair’s tuscan infusion seasoning (or Italian seasoning)
1 1/2 cups of water
Salt & Pepper
Red chili pepper flakes
10 oz chopped tuscan kale
Method
Heat EVOO in a large pot over medium heat.
Add in chopped leeks and sauté for about 5 mins.
Add quinoa, Cannellini beans, veggie broth, and tuscan seasoning. Bring to a boil, lower heat and cover with a lid.
Cook for about 10-15 minutes.
Add 1 1/2 cup of water and season with salt & pepper to taste. Add as much red chili pepper flakes as you’d like!
Add kale and cook for 5-10 minutes or until kale is completely wilted.
Serve in bowls with some sourdough bread for a quick, yummy, and nutritious lunch!
