Turkey Taco Bowls
This is one of my go-to week night meals that always leaves me feeling satisfied and nourished. Plus, it’s flavorful, fun to eat, and nutritious!
Ingredients:
2 Heads of Romaine chopped
1 lb ground turkey (sub chicken or beef)
1 packet of Taco seasoning
2 tbsp of avocado oil
1 can of black beans rinsed and drained
1 cup of white rice
2 bell peppers sliced
1/2 red onion sliced
1 avocado
1/4 cup chopped cilantro
1 lime cut into wedges
*Other topping options: pico salsa, sour cream, greek yogurt, shredded cheese, hot sauce
Method
Cook your rice according to package instructions. Bonus cook in bone broth for extra flavor and nutrients!
While the rice is cooking spread the sliced peppers and onions on a baking sheet and coat with avocado oil and a sprinkle of the taco seasoning. Place in the oven on 400 for about 15-20 minutes.
Next, cook your ground meat in a skillet with avocado oil.
When it’s mostly cooked add a 1/2 cup of water plus your taco seasoning and let it simmer for about 5 minutes.
Once everything is cooked you can prepare your bowls.
Layer rice and romaine as your base. Then top with black beans and ground meat. Then add whatever toppings you like.
I like to serve with tortilla chips on the side to scoop with.
Tip if you’re meal prepping or saving leftovers I like to pack everything up separately so it stays fresh!
