Triple Chocolate Peppermint Cookies

These are like thin mints but better because they are chewy on the inside & healthy!  Perfect holiday or anytime cookie!

Ingredients
1 flax egg
1/4 cup almond butter
1/4 cup coconut oil 
1 tsp vanilla
1/4 cup  maple syrup
1/4 cup coconut sugar
1 tsp peppermint extract
1 cup almond flour
2 tbsp quinoa flour
1/2 cup cacao powder
1/4 tsp salt
1/2 tsp baking soda
1/3 cup of dk choc chip

Mint Dk Chocolate Drizzle:
1/3 cup dk choc chips melted
1/2 tsp of peppermint extract


Method

  • Preheat oven to 350 & line baking trays w/ parchment paper.

  • Make flax egg.

  • Mix almond butter, coconut oil, vanilla extract until smooth

  • Add flax egg and mix.  Add coconut sugar, maple syrup, and peppermint, mix until smooth.

  • Mix almond flour, quinoa flour, cacao powder, salt and baking soda.

  • Add dry ingredients to wet ingredients and mix well until smooth sticky dough is formed.

  • Add in 1/3 cup dk choc chips and mix.

  • Let the dough set in the fridge for about 30 minutes. 

  • Scoop out, roll into balls, and place on the baking sheets.  You should get about 16 cookies. 

  • Bake in the oven for about 12-14 minutes.

  • Remove from the oven and allow to cool for about 5 minutes.  Transfer to a cooling rack and cool for about 30 minutes. 

  • Melt the rest of the dk choc chips and add peppermint.  Drizzle over the cookies. 

  • Cool the cookies in the freezer for about 30 minutes.  Remove and store in a container in the fridge!

    These are so delicious & no one will even realize that they are healthy!
