Triple Chocolate Peppermint Cookies
These are like thin mints but better because they are chewy on the inside & healthy! Perfect holiday or anytime cookie!
Ingredients
1 flax egg
1/4 cup almond butter
1/4 cup coconut oil
1 tsp vanilla
1/4 cup maple syrup
1/4 cup coconut sugar
1 tsp peppermint extract
1 cup almond flour
2 tbsp quinoa flour
1/2 cup cacao powder
1/4 tsp salt
1/2 tsp baking soda
1/3 cup of dk choc chip
Mint Dk Chocolate Drizzle:
1/3 cup dk choc chips melted
1/2 tsp of peppermint extract
Method
Preheat oven to 350 & line baking trays w/ parchment paper.
Make flax egg.
Mix almond butter, coconut oil, vanilla extract until smooth
Add flax egg and mix. Add coconut sugar, maple syrup, and peppermint, mix until smooth.
Mix almond flour, quinoa flour, cacao powder, salt and baking soda.
Add dry ingredients to wet ingredients and mix well until smooth sticky dough is formed.
Add in 1/3 cup dk choc chips and mix.
Let the dough set in the fridge for about 30 minutes.
Scoop out, roll into balls, and place on the baking sheets. You should get about 16 cookies.
Bake in the oven for about 12-14 minutes.
Remove from the oven and allow to cool for about 5 minutes. Transfer to a cooling rack and cool for about 30 minutes.
Melt the rest of the dk choc chips and add peppermint. Drizzle over the cookies.
Cool the cookies in the freezer for about 30 minutes. Remove and store in a container in the fridge!
