Toasty Spiced Granola

First time making granola, don’t know what took me so long considering it’s so easy to make! It’s difficult to find healthy granolas without inflammatory oils and refined sugar… and the ones that you can find are pretty pricey. So making your own is a great option and super simple! Plus it’s fun bc you can really use whatever you want to make it to your liking!

Ingredients
2 cups GF oats
1/4 chia seeds
1/4 cup Pumpkin seeds
1/2 cup nuts (I mixed pecans and walnuts)
1/2 tsp cinnamon 
1/2 tsp ground ginger
1/2 tsp turmeric
1/4 cup coconut oil
3 tbsp maple syrup
1/2 tsp vanilla extract

Method

  • Preheat the oven to 325 and line a baking sheet with parchment paper.

  • Mix all dry ingredients in a large bowl.

  • Mix all wet ingredients in a bowl. Make sure coconut oil is liquified, if not heat in a sauce pan until liquified and add maple syrup and vanilla. Allow to cool for a few minutes.

  • Add wet ingredients to the dry ingredients and mix well.

  • Spread out the mixture on the baking sheet.

  • Bake for 30 mins, mixing half way through.

    This granola is loaded with healthy carbs fats, proteins, vitamins & minerals to power you through your day.  Add it to your fave yogurt, fruit, or just snack on it if ya want!
