Tempeh Taco Bowl

 

TEMPEH TACO BOWL

Let’s taco ‘bout this yummy meal! A super nourishing way to get in your taco fix… it will not disappoint! Flavors are on point and we got all the textures here, crunch included! Plus some rainbows, probiotic & fiber rich foods, and plant-based protein to give you all the nutrients and nourishment you need!

Ingredients
For the Tempeh & Veggies-
1 package of tempeh
1 tbsp tamari
1 tbsp lime juice
2 tsp taco seasoning
1 tbsp avocado oil
1 green bell pepper chopped
1/3 red onion chopped

For the quinoa-
1/2 cup of quinoa
2 tsp taco seasoning
1 tbsp EVOO

For the cabbage slaw-
4 cups shredded cabbage
1 tbsp EVOO
1 tbsp lime juice

Toppings-
Tortilla chips
Pico salsa
Hot sauce
Plant-based yogurt or sour cream

Method

  • For the tempeh & veggies: Crumble the tempeh in a bowl. Add in the tamari and lime juice, tossing to coat. Let marinate for 15-20 minutes. Add avocado oil to a large pan over medium heat. Add the tempeh and taco seasoning, cook stirring occasionally for about 6 minutes. Then add in your chopped pepper and onion. Cook for another 5 minutes or until veggies are cooked and tempeh begins to brown.

  • For the quinoa: Cook, then allow to cool off for a few. Add in EVOO and taco seasoning.

  • For the cabbage slaw: Add shredded cabbage to a large bowl with EVOO and lime juice. Mix well allow to marinate.

  • Build your bowls! Add on your salsa, hot sauce, chips & yogurt as toppings, or anything else you like. Avocado would be a great addition.

  • Makes about 3 bowls!

Tempeh is such a great plant-based protein option! It gets extra points for being a fermented food rich in probiotics! It’s perfect for this dish bc it really takes on the flavor of the taco seasoning and makes for the perfect meat substitute! I buy the flax tempeh which even has some healthy fats & fiber in it too!
