Gut Lovin’ Sweet Potato Soup
Dare I say it’s soup season yet?! Either way this grounding and gut healing soup is the perfect way to support your gut health and immune system anytime of year! It’s loaded up with some of my favorite gut and immune boosting ingredients like; bone broth, sweet potatoes, turmeric, ginger, and black pepper!
Ingredients
2 sweet potatoes sliced & roasted
20 oz bone broth of choice
1/3 can of coconut milk
2 cubes of ginger
1/2 tsp of turmeric
1/4 tsp black pepper
1/4 tsp himalayan salt
Method
Over medium heat add you bone broth and ginger to a medium sized pot.
Add in your cooked sweet potatoes, turmeric, and black pepper.
Cook for about 5-10 minutes over low/ medium heat.
Turn off the heat and allow to cool for about 5 minutes.
Use an immersion blender to puree the soup. You can also allow it took a bit more and add to a blender.
Then add the puree back to the pot and pour in your coconut milk and stir.
Allow to cook over medium heat for another 5 minutes.
Add salt and taste. Add more seasonings if you wish.
Serve in bowls with your favorite garnishes! I used green onions and lime, which was perfection!
