Superhero Noodles
Couldn’t think of name… but this seemed appropriate for lots of reasons. This tastes F-ing amazing… it’s SUPER low carb (gluten & grain free) & it’s of course packed with an amazing variety of nutrients! Really this noodle dish is magical in so many ways!
Ingredients
Tofu & Veggies-
1 block tofu drained & cut into cubes
1 Green bell pepper chopped
1/2 White onion chopped
1 tbsp Avocado oil
1/4 tsp Ginger powder
1/4 tsp Garlic powder
Sprinkle of Salt
Sauce-
3 tbsp tamari
1/4 cup Water (more if needed)
2 tbsp Lemon
1 tbsp White balsamic
1/4 cup Tahini
1/2 tsp Ginger powder
1/2 tsp Garlic powder
1/4 tsp Cayenne powder
Kelp Noodles- 12 oz
1/3 cup basil chopped
2 cups Purple cabbage chopped
1 tbsp Chives chopped
2 tbsp Parsley chopped
Sesame seeds
Method
Preheat oven to 400. Combine tofu & chopped veggies on a parchment lined baking sheet. Toss with avocado oil & seasonings. Place in oven for about 25 minutes, flipping half way through.
Mix sauce ingredients together & add to a large pan over medium heat, cooking and whisking until smooth. Add more water if needed. Add in kelp noodles and basil heat, stirring to coat. Add veggies & tofu into the noodles, toss again.
Serve in bowls, toss in purple cabbage, chives, parsley & sprinkle with sesame seeds!
Don’t be intimidated by kelp noodles. The texture is great and they really don’t have much of a flavor. They’re also super low calorie/ carb… but here are the real reasons you should eat them!
