Summer Citrus Salad

Quite possibly my fave salad creation yet! I know it’s not summer yet…but this salad is giving me all the summer vibes in the best way possible! It will be in my regular rotation all spring & summer long! The idea behind this was pretty simple- create a salad with some of my fave foods. So here you have it! Easy, flavorful, refreshing, and nutritious- this comes together in minutes!

Ingredients
Arugula
Grapefruit
Avocado
Pistachios
Plant-based Feta (or regular)
Parsley
EVOO
Lemon
Pink himalayan salt

Method

  • In a large bowl toss arugula with EVOO and fresh lemon juice. Sprinkle with salt.

  • Top with halved grapefruit slices, avocado, pistachios, feta, and pistachios. Drizzle with extra EVOO and a sprinkle of salt!

  • Option to add protein of choice!

    I love a good homemade dressing, but promise, you don’t even need one for this- just a good EVOO, fresh lemon and a sprinkle of salt! Let me know if this is your new fave salad too!
