Chocolate Covered Strawberry Cheesecake Cups

The cutest little dessert to make for Valentine’s Day! If you love cheesecake and chocolate covered strawberries this one is for you!  They are simple, delicious, don’t require any baking and are actually packed with protein! The secret ingredient here is cottage cheese… which makes them creamy and cheesy…and gives a protein kick.  Make these asap for your Galentines or special someone!

Ingredients
Crust:
1/4 cup chopped walnuts
2 tbsp ground flax
4 dates soaked
2 tbsp cacao powder
1-2 tbsp warm water

Cheese Filling:
1 1/4 cups cottage cheese (regular or lactose free)
1 cup strawberries
1 scoop vanilla protein powder
1/2 tsp lemon juice

Method

  • Add all crust ingredients to a food processor and pulse until it forms a crumbly texture

  • Add about 1 tbs to each muffin liner, then pack down with your fingers to form a thin crust layer.

  • Clean your food processor. 

  • Add all filling ingredients to the food processor and pulse until smooth and creamy.

  • Pour about 1/4 cup into each muffin liner on top of the crust 

  • Slice strawberry hearts and place one on each.

  • Add to the freezer and allow to firm for at least 2-3 hours or overnight.

  • Remove from the freezer. 

  • Melt 1/4 cup of dark chocolate and then drizzle over each mini cheesecake. 

  • Place in the fridge for a few minutes and allow the chocolate to harden

  • Store in the freezer and leave out to thaw about 30 mins to 1 hour before eating.

  • Makes 8 cups.
