Salmon with Garlicky Kale
SALMON WITH GARLICKY KALE
AKA Salmon ‘a la Freda’. Inspired by a dish at one of my fave spots Jack’s Wife Freda! I absolutely love their ‘fish a la plancha’… salmon served over a bed of sautéed kale. It’s just such a delicious, balanced, and healthy meal. I could eat it over and over again… so I decided it was time to make a version myself, with a little kick! It’s so simple and ready in 15 minutes!
Ingredients
2 x 4-6 oz Salmon filets
6 cups Shredded kale
3 tbsp EVOO
Juice of a lemon
1 tsp minced garlic
Salt, black pepper, red chill pepper flakes
1/4 cup pepitas
Method
For the salmon- Preheat oven to 375. Place salmon filets on a baking sheet lined with parchment paper. Drizzle a bit of EVOO and lemon juice on the filets. Add minced garlic, and then sprinkle salt, pepper, and Chile pepper flakes on top. Place in the oven for about 13-15 minutes.
For the Kale- Heat EVOO in a sauté pan over medium low heat. Add minced garlic and kale, and toss. Add lemon juice and sprinkle salt and pepper. Toss again and continue to cook over medium low heat while mixing. Cook for about 5-8 minutes, or until cooked to your liking. Remove from heat and add extra lemon juice and the pepitas.
Serve the salmon on top of the kale with a lemon wedge.
