Rainbow Nourish Bowl

A colorful and delicious plant-based bowl to nourish your mind, body, and soul. This bowl is absolutely packed with nutrient dense plant foods that are easy on the digestive system and help to reduce inflammation!

Ingredients
1 cup of dry quinoa
1 cup of dry lentils
1 cucumber chopped
Fresh chopped dill
Fresh chopped mint
5 oz plant based feta crumbled
2 Radishes halved and thinly
sliced or julienned
1 Avocado sliced
Micro greens
Pink himalayan salt

Dressing
Juice of 1 blood orange
4 tbsp white balsamic
¼ cup EVOO
2 tbsp dijon mustard
1/4 cup of tahini
⅛ tsp ground black pepper

Option: add a high quality animal protein such as wild-caught salmon or pasture-raised hard-boiled eggs!


Method

  • Cook quinoa.

  • Cook lentils.

  • Make the dressing by whisking all ingredients together in a bowl until smooth.

  • Build your bowl, sprinkle with the fresh herbs, drizzle with some dressing and finish with a bit of pink himalayan salt to taste!

  • Makes 4 servings
