Pumpkin Spice Protein Muffins
Your fave seasonal flavor with a protein boost! You'll love these vegan and gluten-free pumpkin spice muffins that are packed with nutrients!
Ingredients
Wet:
1 cup pumpkin puree
1/3 cup + 1 tbs coconut oil
1 cup plant based milk
1/2 cup coconut sugar
1 tbsp acv
Dry:
1 3/4 cups gluten free all purpose flour
2 scoops Truvani pumpkin spice protein powder
3 tsp pumpkin pie spice
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/4 cup hemp hearts
1/4 cup chia seeds
To make these without protein powder, make the below alterations to the ingredients:
3/4 cup of milk
3/4 cup of coconut sugar (if you like things sweeter, otherwise 1/2 cup is fine)
2 cups of flour
Method
Add wet ingredients, plus coconut sugar to a large bowl and mix until combined.
Add all dry ingredients to a bowl and mix.
Add dry ingredients to the bowl with wet ingredients and mix well.
Scoop into a lined or greased muffin tin.
Bake at 415 for 6 minutes
Lower heat to 350 and bake for 14 minutes
