Pumpkin Power Bites & Cookies
Happy Halloween! So this ended up being 2 recipes in one. I intended to make pumpkin power bites, and mid making them, I thought ‘this would be great as a cookie’… so I decided to make both! They are equally delicious and necessary, but feel free to just make the version that’s speaking to ya!
Ingredients
1/2 cup pumpkin puree
1/4 cup almond butter
1/2 cup ground flax
1/2 cup of gf oats
1/4 cup chia seeds
1 tbsp pumpkin pie spice
1 tsp cinnamon
3 tbsp date syrup
1 tsp vanilla
3 scoops collagen powder
Toppings for bites:
1/4 Hu kitchen gems
1 tsp Coconut oil
1 tbsp coconut flakes

Method
Blend all ingredients for the bites/ cookies together in a food processor until it forms into a doughy consistency.
Preheat oven to 350 and line a baking sheet with parchment paper.
Roll into 1” balls for the bites- I made 10 bites, leaving the rest for the cookies. Place them on a tray lined with parchment paper and put in the freezer for 45 mins.
With the rest of the dough form cookies into a round shape and flatten with a fork a bit. I used slightly more dough for per cookie than i did for the bites- I made 6 cookies. Then press a hu kitchen gem in the center of each cookie.
Place in the oven for about 12-15 minutes. Remove and let cool.
Remove the bites from the freezer.
Melt the chocolate and coconut oil. Coat the bites in the chocolate. Put back in the freezer for 10 mins.
Store the cookies room temp in a container. Keep bites in a container in the fridge.
