Pumpkin Pie Chia Pudding

Happy October!  Celebrating with a little festive pumpkin breakfast! This one is great for meal prep and it’s got lots of healthy fats and fiber to keep you full.  

Ingredients

3 tbsp Chia seeds
1 tbsp ground flax
1/2 cup Pumpkin puree
1/2 cup milk of choice
1/2 tsp Pumpkin pie spice
2 tbsp Maple syrup
2 tbsp pecans

Method

  • Add all ingredients to a jar or bowl and mix.  Let it sit for about 15 mins or leave in the fridge overnight. 

  • Top with extra pecans when you’re ready to eat it. 

Easy to throw together and super yummy!
