Pumpkin Butter Cups
When i say this is my fave dessert creation to date i mean it! You have to make these ASAP… its all of your pumpkin spice and peanut butter cup dreams come true in one dessert! Best part is, these are good for you and won’t cause a sugar rush! Refined sugar free, gluten free, dairy free, and even peanut free! These are def a part of a healthy diet… you’re welcome!
Ingredients
Chocolate layer:
1 cup of melted dk chocolate
1 tsp of pumpkin pie spice
Pumpkin layer:
1/3 cup of pumpkin puree
2 tbsp of sunflower butter (sub tahini or nut butter )
1.5 tsp pumpkin pie spice
2 tbsp honey
Sprinkle Sea salt
2 tbsp liquid coconut oil
Method
Melt chocolate, remove from heat and add in pumpkin pie spice.
Pour 1-2 tbsp of chocolate into silicone muffin liners (or silicone muffin pan)- freeze 30 mins or until solid.n the meantime combine all ingredients for the pumpkin layer into a bowl. Mix well. Make sure all ingredients are room temp so the coconut oil does not solidify.
Add 1 tbsp pumpkin mixture on top of the solid chocolate in an even layer, freeze 30 mins.
Optional drizzle dk chocolate freeze on top and place back in the freezer for 1-2 hours or until completely solid.
Remove from cups and store in a container in the freezer.
Makes about 12-13 cups!
Tip: If you don’t have silicone muffin liners or tray you can use a silicone ice cube tray or paper muffin liners! I had some extra mixture left and made some minis in my silicone ice cube tray!
