Raspberry Brownies

 

NO BAKE RASPBERRY BROWNIES

These beauties are so simple and delicious + no baking required! Dark chocolate and raspberry is one of my fave combos, so I had to come up with a fun little v-day themed treat! These are nutrient dense, loaded with antioxidants & healthy fats!

Ingredients
Brownies-
1 cup of dates (if dry soak in water for 10 minus and drain)
1 cup of walnuts
5 tbsp cacao powder
2 tbsp tahini (sub nut butter)
Pinch of sea salt

Raspberry Chia Jam-
1 bag of frozen raspberries (sub strawberries)
2 tbsp of chia seeds
1 tbsp lemon juice
1 tbsp maple syrup

Dark chocolate

Method

  • Add walnuts to food processor and pulse until finely ground

  • Add in cacao powder, salt, and tahini, blend again.

  • Add half the soaked dates and pulse again until well combined. Then add the rest of the dates and blend until dough starts to form and ingredients are blended.

  • Line a tray with wax paper. Using a heart shaped cookie cutter as a mold add the mixture into the center and press down firmly. Once packed lift the cookie cutter and repeat until you’ve used all the mixture

  • I made My brownies about 3/4” thick. You can make them thicker if you want.
    If you don’t have cookie cutters, use an 8x8 baking dish and add all mixture packing down firmly.
    Place in the fridge for at least 30-40 mins to firm.

  • For the jam, heat raspberries in a small sauce pan over medium heat until it begins to bubble slightly, mash with a fork.

  • Lower heat and add in the rest of the ingredients and stir.

  • Remove from heat and allow to cool off. Place in a jar and leave in the fridge for about 30 mins.
    This will make more than you need for the brownies you can store in a mason jar and use for other things.

  • Once your brownies and the jam are cold, top brownies with a thin layer of chia jam, spreading evenly.

  • Melt dark chocolate and drizzle over the brownies.

  • Place in the fridge for 20 mins to allow everything to firm and chocolate to solidify.
    If you didn’t use cookie cutters, slice into squares.

  • Store in the fridge in a container.
