Meal Prep Cobb Salad
This is my new favorite meal prep salad for those busy summer weeks when I just want something healthy ready for lunch! It’s simple, flavorful, satisfying and crunchy. Plus it’s super easy to throw together. You can totally make this in a big bowl, but if you’re meal prepping, I recommend dividing and layering everything in containers so you have lunches to grab and go throughout the week. The dressing for this one really brings it all together… so don’t skip out on that part!
Wet Ingredients
2 heads of romaine chopped
3 slices of cooked turkey bacon
3 hard boiled eggs
1 cup halved cherry tomatoes
1 cup chickpeas
1/4 cup sliced radishes
2 tbsp chopped chives
Dry ingredients:
1 tbsp EVOO
1 tbsp ACV
2 tbsp Lemon juice
1 tbsp Dijon mustard
3 tbsp tahini
1/4 tsp Garlic powder
1/4 tsp Turmeric
1/4 tsp black pepper
Sea salt to taste
1- 2 tbsp of water
Method
Hard boil your eggs and cook the turkey bacon as desired.
Wash and chop all of the veggies.
Rinse and drain the chickpeas.
Slice the hardboiled eggs and chop the turkey bacon.
Divide and layer all of your veggies amongst 3 containers. Start with the lettuce, then chopped veggies and chickpeas.
Top each salad with a sliced hardboiled egg and turkey bacon.
Close the lid on each container and store in the fridge.
Whisk all dressing ingredients together until blended and creamy. Store in a separate jar to use throughout the week.
When ready to eat top with sliced avocado and dressing.
Makes 3 meal sized servings.
