Matcha Pistachio Chocolate Chip Cookies
These matcha pistachios chocolate chip cookies are my new favorite gluten-free dessert. The flavor combination is just absolutely perfect and not only are these made with better for you ingredients, but they’re actually better than your average chocolate chip cookie in my opinion- I had some friends taste test too to confirm. Plus, they’re a pretty green color which always makes things fun.
Ingredients
1/2 cup solidified coconut oil
1 pasture-raised egg (room temp)
1/2 teaspoon vanilla extract
3/4 cup maple sugar (sub 1 cup coconut sugar)
1 1/4 cup almond flour
1 cup gluten-free oat flour (sub all purpose gf flour)
1 teaspoon baking powder
1/2 cup dark chocolate chips
1/3 cup chopped pistachios
1 tbsp culinary grade matcha
Method
Preheat your oven to 350.
Cream together melted coconut oil (cooled to room temp), maple sugar, and vanilla. Then add the egg and mix again.
Gradually add almond flour, baking powder and oat flour and mix well until dough is formed.
Sift your matcha into the bowl (prevents clumping) and mix well until it’s blended into a smooth green color throughout the dough.
Add in the pistachios and dark chocolate chips and mix again.
Line 2 baking sheets with parchment paper and use a scooper to scoop out cookies onto the baking sheet (about 2 tbsp of dough per cookie), leaving about 1-2 inches of space between each cookie.
Baking the oven for 12-15 minutes.
Allow to cool for a few minutes and enjoy!
