Lentil Salad
LENTIL SALAD
I’m all for a fresh and flavorful salad. Using fresh herbs instantly elevates flavor in anything, especially salads… here I used lots and lots of fresh dill. This is super simple and great for meal prep!
Ingredients
1 cup dry lentils
1 Red bell pepper chopped
Cherry tomatoes halved
1/2 of a red onion chopped
Fresh dill chopped
Avocado oil
Fresh lemon juice
Apple cider vinegar
Salt, pepper, & garlic powder
Method
Cook lentils according to package (i usually cook with a bay leaf for flavor). Drain and let them cool.
Add the lentils to a large bowl, add in chopped veggies, olive oil, lemon, and apple cider vinegar. Toss to coat. Add seasonings to taste and fresh dill- toss again. Done!
Makes about 4 servings.
I like throwing this on top of some greens like arugula or serving as a side with some fish!
