Honey Mustard Kale Salad

 

HONEY MUSTARD KALE SALAD

Honey mustard is a fave dressing of mine, so I wanted to create a healthy version and an easy salad to go with it. This nutrient dense salad has a kale base and is loaded with roasted sweet potatoes, brussel sprouts and smart tenders (plant based ‘chicken’ tenders). Lots of flavor and super filling!

Ingredients

8 oz of shredded kale
1 large sweet potato
16 oz Brussel sprouts
1 Package of LightLife Smart Tenders

For the dressing:
4 tbsp mustard
2 tbsp honey
2 tbsp apple cider vinegar
2 tbsp tahini
Splash of water

Method

  • Preheat oven to 400. Line 2 baking sheets with parchment paper.

  • Chop sweet potatoes into cubes and trim brussel sprouts and cut into halves. Toss with olive oil salt and pepper. Spread out on baking sheets in a single layer. Place in the oven and cook for 15 minutes. Remove both trays, turn veggies, and cook for another 15 minutes. Remove from the oven and let veggies cool.

  • Heat a pan over medium heat with avocado oil and cook smart tenders for 3 minutes on each side.

  • Whisk together all ingredients for the dressing in a bowl.

  • In a large bowl toss kale with 2/3 of the honey mustard.

  • Top the salad with the roasted veggies and smart tenders.
    Drizzle with the rest of the dressing.

Makes about 3 servings. Enjoy!
