Honey Mustard Kale Salad
HONEY MUSTARD KALE SALAD
Honey mustard is a fave dressing of mine, so I wanted to create a healthy version and an easy salad to go with it. This nutrient dense salad has a kale base and is loaded with roasted sweet potatoes, brussel sprouts and smart tenders (plant based ‘chicken’ tenders). Lots of flavor and super filling!
Ingredients
8 oz of shredded kale
1 large sweet potato
16 oz Brussel sprouts
1 Package of LightLife Smart Tenders
For the dressing:
4 tbsp mustard
2 tbsp honey
2 tbsp apple cider vinegar
2 tbsp tahini
Splash of water
Method
Preheat oven to 400. Line 2 baking sheets with parchment paper.
Chop sweet potatoes into cubes and trim brussel sprouts and cut into halves. Toss with olive oil salt and pepper. Spread out on baking sheets in a single layer. Place in the oven and cook for 15 minutes. Remove both trays, turn veggies, and cook for another 15 minutes. Remove from the oven and let veggies cool.
Heat a pan over medium heat with avocado oil and cook smart tenders for 3 minutes on each side.
Whisk together all ingredients for the dressing in a bowl.
In a large bowl toss kale with 2/3 of the honey mustard.
Top the salad with the roasted veggies and smart tenders.
Drizzle with the rest of the dressing.
Makes about 3 servings. Enjoy!
