High Protein Pasta Salad

This pasta salad checks all of the boxes; it’s easy, simple, balanced, nutritious, satisfying and filling! Plus it’s a great dish to prep ahead, so whether you need a new healthy dish to meal prep or you’re going to a summer BBQ- this is the perfect solution!

Ingredients
1 box of lentil pasta cooked
2 cans of wild caught tuna
1 green bell pepper chopped
1 red bell pepper chopped
1/4 cup pickled red onions
1/4 cup capers 
1/4 cup fresh parsley chopped

Dressing:
2 tbsp EVOO
2 tbsp acv
2 tbsp tahini
2 tbsp water
1/4 tsp black pepper
1 tsp Italian seasoning
2 tbsp fresh lemon
1 tsp dijon mustard


Method

  • Add all of your pasta salad ingredients to a big bowl.

  • Whisk all ingredients for the dressing in a jar or bowl.  

  • Pour the dressing over the pasta salad and toss until well combined.

  • Makes about 4-5 meal sized servings!
