GREEN GODDESS SOUP

Green Goddess Soup - So I was gonna make that viral green goddess salad… but brrr , i’m cold over here in NY! So here’s my attempt at making green goddess cozy & warm… and it turned out pretty damn tasty! Get your green goddess on with this mind body soul nourishing soup!

Ingredients
1 tbsp avocado oil
1 yellow onion chopped
3 stalks of celery chopped
3 cloves of garlic chopped
4-5 cups of water
12 oz Broccoli florets
1 Zucchini chopped
2 cups packed baby kale or spinach
1/3 cup fresh chopped parsley
1/3 cup fresh chopped Basil
2 tbsp fresh chopped chives
Salt and pepper to taste
3 tbsp nutritional yeast
1 lemon
Red chili pepper flakes

Toppings:
Extra fresh herbs
Hemp hearts
Chili pepper flakes

Method

  • Add avocado oil to a large pot over medium heat.  Add onions & celery- & season with salt and pepper. Cook for about 5 minutes.  Add in garlic and cook for another 2-3 minutes. 

  • Add in the water, broccoli, & zucchini- raise heat and bring to a simmer.  Lower heat and cover, let simmer for about 10 minutes or until broccoli is tender. 

  • Turn off heat and stir in the kale, fresh herbs, & nutritional yeast and let the greens wilt. 

    Allow to cool off for a few minutes and use an immersion blender to puree (or transfer to blender-make sure its not hot!)

  • Add red chili flakes & season with more salt & pepper if needed.  Don’t be afraid to season generously here since we used water not broth.

  • Add fresh lemon juice & desired toppings.  Don’t skip the lemon it really enhances the flavor! Serve with your fave crackers or bread! 

Tip: Store individual servings in mason jars in the fridge, so you have a meal ready on the the fly! You can freeze too!

Makes about 5 servings!
