Protein Green Goddess Salad

Rhis is a great update to the viral green goddess salad from last year.  As the weather gets warmer, we’ll be craving more of these light and cooling summer salad combos.  It’s already kicking in for me and I was feeling the green goddess flavor combo, but I wanted to give it a good protein boost!  This is packed with flavor and will leave you full, satisfied, and nourished!

Ingredients
Green Goddess Salad
9 oz Shelled edamame 
1 Green cabbage diced
1 English Cucumber diced
1 Avocado diced
3 Stalks of scallions thinly sliced (reserve green tops for the dressing)

For the dressing
1 cup packed Basil
Juice of 1 1/2 Lemons
1 Roasted Jalapeño
Scallions (green tops only)
2 tbsp Garlic EVOO (or regular EVOO & add garlic)
1/4 cup Shelled hemp hearts
1/4 cup Nutritional yeast
Handful of arugula 
Salt & Pepper to taste


Method

  • Add all veggies for the salad to a large bowl.

  • Make your dressing by combining everything in a blender or food processor until smooth.  Add salt and pepper to taste. 

  • Pour the dressing over the salad and toss until everything is well coated in the dressing.

  • This will make about 3-4 meal-sized servings!

    If you’re meal prepping this you can store all chopped veggies and dressing in separate containers and then build your bowls and add dressing as you go so it stays fresh!
