Greek Salad Tostada
GREEK SALAD TOSTADA
Not your regular greek salad. A fresh crunchy twist on one of my all time fave salads. I had something similar at a restaurant in SD and I had to recreate it. This comes together in minutes, makes a great light lunch that will leave you feeling satisfied. I’ve been having this on repeat it’s sooo good!
Ingredients
1 tortilla
1 tsp avocado oil
2 tbsp hummus
1/3 of avocado sliced
1 packed cup of greens
1 Persian cucumber chopped
4 cherry tomatoes chopped
5 pitted kalamata olives
2 tbsp crumbled feta
1 tbsp EVOO
Salt & pepper
1 tsp fresh lemon juice
Sprinkle of Za'atar seasoning
1 tbsp spicy chili tahini
Method
Heat avocado oil in a pan over medium heat. Add the tortilla, turn up the heat a bit and cook until crispy on each side (flipping so both sides are crispy).
In the meantime add your greens to a bowl and toss with some of the EVOO, fresh lemon juice, salt and pepper.
Place the crispy tortilla on a plate and begin to build your tostada. Spread hummus on the tortilla, add the avocado slices. Top with the greens, then add the chopped cucumbers, tomatoes, olives, and feta.
Then add a drizzle of EVOO, Za'atar seasoning, and finally a drizzle of tahini!
Option to add extra protein if you want to!
