Golden Banana Protein Muffins

Looking for a new banana bread recipe?! Look no further….this one is loaded up with protein, healthy fats, and anti-inflammatory spices!  Vegan, gluten-free, and refined sugar free without compromising taste or texture, so they’re something everyone can enjoy!

Ingredients
2 bananas
1/3 cup + 1 tbs coconut oil
3/4 cup plant based milk
1/2 cup coconut sugar
1 tbsp acv
1/4 cup chia seeds
1 3/4 cups gluten free all purpose flour
2 oz plant based protein powder
3 tsp A Spice Affair golden booster (or any golden latte mix)
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/4 cup hemp hearts


Method

  • Add wet ingredients, plus coconut sugar to a large bowl and mix until combined.  〰️〰️Then add chia seeds and set aside. 

  • Add dry ingredients (except hemp hearts) to a bowl and mix. 

  • Add dry ingredients to the bowl with wet ingredients and mix well.  

  • Add in hemp hearts and mix again.

  • Scoop out to lined or greased muffin tin.

  • Bake at 415 for 5 minutes

  • Lower heat to 350 and bake for 15 minutes.

These are a great anytime snack or breakfast!  Prep for the week so you have a healthy yummy option ready to go!
