Fluffy Gluten-Free Pancakes
This is the pancake recipe you didn’t know you needed! They are made with just a few ingredients you probably already have, so you can easily whip them up anytime. Plus, they’re loaded with healthy fats, fiber and protein so they’ll actually keep you full. They are gluten-free and kid friendly, so they are something everyone can enjoy! Ditch the store-bought mixes and make these instead!
Ingredients
2 cup oats
3 tbsp hemp hearts
2 tbsp ground flax
2 tsp baking powder
1 scoop collagen powder
1/2 tsp cinnamon
1 tbsp maple syrup
1 cup almond milk
1 tsp lemon juice
2 eggs
Method
Blend your oats and hemp hearts to a flour like consistency.
Add them to a bowl with the rest of the dry ingredients.
In a separate bowl beat your eggs and combine with milk, lemon juice, and maple syrup.
Mix the wet ingredients with the dry ingredients until smooth.
Heat a pan with ghee over medium heat and scoop out about 1/4 cup of batter to make each pancake, cooking for a few minutes on each side until small bubbles begin to form and you can easily flip.
Top with ghee, berries, and maple syrup!
