Easy Pasta Alla Norma

One of my all time fave pasta dishes because it features eggplant, which is one of my fave foods! Eggplant is the perfect addition to a hearty plant-based pasta dish… it’s nutrient dense and gives great texture and flavor.  This is an easy, delicious meal, that requires very little prep!  I used a dairy free vodka sauce … and red lentil pasta to get in some protein and healthy fiber to keep me full.

Ingredients

2 eggplants cut into 1/4”- 1/2” slices
1/2 of an onion chopped
1 box of Red lentil pasta
Salt, pepper, red chile pepper flakes
EVOO
Primal kitchen no dairy vodka sauce
Fresh basil chopped
Vegan grated parmesan 

Method

  • Preheat the oven to 400.  Line a baking sheet with parchment paper.

  • Toss eggplant and onions with EVOO, salt and pepper.  Place on the baking sheet in a single layer.  Roast for about 30 mins, flipping half way through.

  • Cook the lentil pasta and drain

  • Add the pasta back into the pot and add the sauce and roasted veggies.  Sprinkle in some red chile pepper and fresh chopped basil. 

  • Serve in bowls with some grated parm and extra fresh basil!  

Here to show you that there’s definitely healthy ways to make a delicious comforting bowl of pasta.  Theres nothing wrong with indulging in an amazing pasta dish- gluten and dairy filled!  I fully support my clients in enjoying their favorite foods, but sometimes I hear them say the miss it  bc they choose to avoid it.  They notice it makes them sluggish or they have a sensitivity to gluten.  But I love to stress to them that there are so many ways you can make a pasta dish into a nutritious meal that will fuel you and leave you satisfied and feeling good!  Try this, you won’t be disappointed!
