Crunchy Vegan Kale Cesar

Nothing like a good Caesar salad!  This one is vegan and gluten free, with lots of healthy fats to keep you full!  I topped it off with avocado & homemade everything parmesan crisps… the crisps really do the trick- trust me!  Flavor and crunch are on point!

Ingredients
Dressing:
1/3 cup + 1 tbsp tahini
1 tbsp nutritional yeast
1 tbsp dijon mustard
1 tbsp apple cider vinegar
1/8 cup of fresh lemon juice
1 tbsp capers + 1 tbsp brine
1 tbsp EVOO
1/4 cup of water
Ground black pepper

Salad:
1 Bunch of green kale shredded 
2 tbsp EVOO
10 oz Shredded green cabbage
1/2 cup Shredded vegan parmesan
1 Avocado

‘Parm’ Crisps:
1 cup Shredded vegan parm
1.5 tbsp Everything seasoning
2 tbsp of water

Method

  • Blend all ingredients for the dressing together in a blender or food processor until smooth, add more water if needed for desired consistency.

  • Mix ingredients for ‘parm’ crisp together in a bowl. On a parchment paper lined baking sheet drop small spoonfuls into small flat rounds spaced about an inch apart.  Makes about 18-20 crisps.  Cook in the oven at 400 for about 8 minutes, or until golden. 

  • -Add kale to a large mixing bowl, add EVOO, and massage kale. 

  • Add in cabbage and dressing and mix well until coated.

  • Add shredded parmesan and toss. 

  • Top with avocado and parmesan crisps

  • Optionally add your favorite protein!

  • Makes about 4 servings.
