Chicpea Salad Sandwich

 

Chickpea Salad Sandwich

A twist on a tuna salad sandwich, but a plant-based greek version that is so flavorful and filling!  

Ingredients:
1 can of chickpeas drained
1/4 red onion diced
10 pitted kalamata olives diced
Juice of 1/2 a lemon
1 tbsp tahini
2 tbsp fresh parsley chopped
1 tsp dijon mustard
Salt and pepper to taste


Method

  • Mash your chickpeas.

  • Add all other ingredients and mix well

  • Toast your favorite bread (I love Knead Love gluten-free sourdough) and top with the chickpea salad. 

  • Serve with veggie sticks. 

  • Makes about 2-3 servings.
