Caramelized Apple Salad
CARAMELIZED APPLE SALAD
Are you ready for all the FALL recipes?! Not sure if I am tbh, but here we go! This is a great twist on a kale salad and perfect for apple season!
Ingredients
Chopped kale (I used TJ’s cruciferous crunch blend)
1/3 cup of dried cranberries
1 apple sliced (I used Gala)
2 tbsp honey
2 cups of cooked farro
For the dressing:
Juice of half of a lemon
1/4 cup of tahini 1 tbsp honey
1 tbsp EVOO splash of water
Salt, pepper, garlic powder
Method
Heat honey in a sauté pan over low-medium heat. Add apples and cook on each side for a few minutes until they soften and begin to look golden. Remove from heat and set aside.
Prepare dressing; add all ingredients to a small bowl and whisk until combined well.
Add kale to a large bowl, add in dressing and mix. Add the cooked farro and dried cranberries and mix again.
Place caramelized apple slices on top.
This is a great salad for a holiday because it looks festive and it’s packed with flavor! Def a crowd pleaser and looks impressive, but is actually super simple. I made this for Rosh Hashanah, the Jewish New Year when we eat apples and honey for a sweet new year ahead… but really it’s perfect for any fall celebration!
