Copycat Cacao Crunch Bars
A nostalgic and better for you version of an all time favorite store bought treat, just in time for Halloween! These cacao crunch bars are made with just 4 simple nutrient dense ingredients and are packed with fiber, minerals, and antioxidants from cacao and quinoa! I promise you’re going to be hooked on these!
Ingredients
3/4 cups of Navitas Organics Semi-sweet Cacao Wafers
1/2 cup quinoa
1/2 tbsp vanilla bean paste (sub vanilla extract)
1/2 tbsp coconut oil
Method
Rinse your quinoa using a fine mesh sieve. The quinoa needs to be moistened for this, so even if your quinoa is pre-rinsed you still need to do this.
Next pop the quinoa. Heat a small pan over medium-high heat. Add a scoop of quinoa to the pan and flatten out so quinoa is in a thin layer, using a spatula to break it up. Once it begins popping, give the pan a good shake and allow it to pop a bit more. This whole process will only take about a minute. Pour popped quinoa into a separate bowl. Repeat scoop by scoop until all of your quinoa is popped. Be sure not to toast the quinoa for too long, it should be lightly toasted/ golden.
Next melt the chocolate in the microwave or double boiler. Add in vanilla and coconut oil and mix until smooth.
Pour the chocolate over the quinoa and mix until the quinoa is evenly coated.
Line a small glass container about 6x4 or a loaf pan with parchment paper folding over the edges so you can easily remove the solid chocolate bar later. Pour your mixture in and use a spatula to smooth out.
Place in the fridge for about 30 minutes or until solid.
Remove from the container and then cut into cut into bars. For large bars cut into 5 equal long rectangular pieces. For minis, cut the 5 pieces again down the middle to make 10.
