Buffalo Tofu Salad
BUFFALO TOFU SALAD
This turned out fire, for real! It’s a vegan and gluten free version of a buffalo chicken salad- which I’m not gonna lie I miss in terms of flavor! So I created my own simple and easy version, and it def satisfied my craving!
Ingredients
Block of Extra firm Tofu
Buffalo sauce (I used The New Primal)
Buffalo seasoning (I used The New Primal)
Nutritional yeast
Avocado oil
Chopped Romaine
Shredded carrots
Chopped celery
Sliced radishes
Vegan feta (I used Violife)
Vegan ranch (I used Primal Kitchen)
Method
Preheat oven to 400. Line a baking sheet w/ parchment paper
Slice tofu into 3/4 thick slabs and drain. Drain using paper towels and a cutting board.
Chop tofu into cubes and coat with avocado oil, then sprinkle buffalo seasoning and nutritional yeast. You can just eyeball these ingredients to the spiciness of your liking. Let sit for 5-10 minutes to marinate.
Bake for about 20-25 minutes flipping halfway through. Turn to broil and cook for another 5 minutes. Tofu should look crispy and start to brown. Remove from oven and let cool for 5 minutes.
Place tofu in a bowl and add buffalo sauce, toss to coat. Again add the sauce to your liking, everyone has a different spice tolerance!
Assemble salad and top with buffalo tofu and ranch dressing! I also topped the salad with a little extra buffalo sauce for extra heat!
