Apple Walnut Crisp
Apple crisp is one of my absolute fave desserts… so thought it was time to make a healthy version without all of the refined sugar and flour, that’s also vegan and gluten free. This makes a great dessert, snack, or even breakfast bc it’s really got all the good stuff! It’s also the perfect single serving if you’re hungry
Ingredients
Apple filling:
1 apple sliced
1/2 tsp cinnamon
2 tbsp of water
1/2 tap apple cider vinegar
1 tbsp date syrup (sub maple syrup)
Crisp topping:
1/4 cup oats
2 tbsp almond flour
2 tbsp coconut sugar
2 tbsp chopped walnuts
1 tbsp coconut oil
Method
Add apples to baking dish. Mix cinnamon, water, apple cider vinegar, and syrup in a bowl. Pour mixture over apples. Bake apples for 10 minutes.
Mix all dry ingredients for crisp topping and then add oil and mix again.
Remove baking dish from the oven and add topping over the apples and bake for another 30 minutes.
Top with plant based yogurt or ice cream. I used cocojune yogurt which has the perfect light and fluffy texture!
Makes 1-2 servings. If you’re making for more, just multiply ingredients by 4 or 5 and bake in a larger dish.Easy to throw together and super yummy!
