Apple Walnut Crisp

Apple crisp is one of my absolute fave desserts… so thought it was time to make a healthy version without all of the refined sugar and flour, that’s also vegan and gluten free. This makes a great dessert, snack, or even breakfast bc it’s really got all the good stuff! It’s also the perfect single serving if you’re hungry

Ingredients

Apple filling:
1 apple sliced
1/2 tsp cinnamon
2 tbsp of water
1/2 tap apple cider vinegar
1 tbsp date syrup (sub maple syrup)

Crisp topping:
1/4 cup oats
2 tbsp almond flour
2 tbsp coconut sugar
2 tbsp chopped walnuts
1 tbsp coconut oil

Method

  • Add apples to baking dish. Mix cinnamon, water, apple cider vinegar, and syrup in a bowl. Pour mixture over apples. Bake apples for 10 minutes.

  • Mix all dry ingredients for crisp topping and then add oil and mix again.

  • Remove baking dish from the oven and add topping over the apples and bake for another 30 minutes.

  • Top with plant based yogurt or ice cream. I used cocojune yogurt which has the perfect light and fluffy texture!

    Makes 1-2 servings. If you’re making for more, just multiply ingredients by 4 or 5 and bake in a larger dish.Easy to throw together and super yummy!
