Apple Pie Protein Oats

A new oat combo with hidden veggies and protein for a balanced breakfast… best part is it tastes like apple pie!  This will leave you feeling emergized and satisfied! Can you guess what the hidden veggie is?

Ingredients
2/3 cup organic rolled oats (i use TJ’s ancient grain & seed blend)
2/3 cup cauli rice
1 apple 
1 tsp ghee or coconut oil
1 tsp Apple pie spice
1 1/4 cup water
1/4 cup Milk
1 scoop protein powder
1 tbsp maple syrup
1/4 cup yogurt


Method

  • Start by cutting your apple in half.  Cut a few very thin slices and dice up the rest into small cubes.

  • In a saucepan add some ghee and heat over medium. Add in all of the apples and 1/2 tsp of apple pie spice.  Mix well and cook for about 5 minutes.

  • Remove the slices only, you’ll use as a topping at the end.

  • With the diced apples still in the pot, add your water, then the oats and cauli rice.  Allow to cook according to oat package instructions.

  • Once oats are cooked add in milk, another 1/2 tsp of apple pie spice, and the protein powder and mix until everything is blended (you can add more milk or water for a consistency you like).

  • Turn off the heat and add the maple syrup and mix well.

  • This makes 2 servings.  Divide into  2 bowls if you’re cooking for a plus 1, or save half in a container and you have breakfast for the next day! Top each bowl with apples, extra spices, and yogurt.

    Literally tastes like apple pie, is so nourishing and delicious loaded up with healthy fats, fiber, and protein for a very well balanced breakfast! I like using an oat blend with other grains and seeds (from TJs or thrive market) to add protein and healthy fats for satiety and stabilizing blood sugar.  The protein powder and yogurt help with this too! 

    You might be thinking why cauli rice is in here?! I tend to feel very heavy after oats and this lightens it up a bit while adding in a little nutrient boost!  You won’t even notice it at all, so don’t be intimidated!
